You read that right. It honestly seems like I don't even need to say anything else, but I'll set the mood for you.
You're sitting on your porch, there's a cool breeze in the air, a fire is going in the fire pit, and you're needing something sweet. Look no further because the answer to your problem is no doubt these sourdough pumpkin chocolate chip cookies.
When I'm ready to bake cookies, I'm ready to bake cookies. I don't love when a recipe calls for the dough to sit overnight or in the refrigerator for hours at a time. No need that here! This cookie recipe is so easy and a family hit!

How to make Sourdough Pumpkin Chocolate Chip Cookies:
Ingredients you'll need:
1/2 cup butter (room temperature or slightly melted)
3/4 cup pumpkin puree
1 teaspoon vanilla extract
1/2 cup sourdough discard
1 large egg
1 1/2 cups all purpose flour
1/2 brown sugar
1/4 cup raw sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips
1 teaspoon cinnamon
1/2 teaspoon nutmeg
coarse sea salt for sprinkling

Instructions:
Preheat your oven to 350 degrees. While oven is pre-heating, cream butter and sugar in your electric mixer. You can't go wrong with a KitchenAid Mixer. I like to do this for 2-3 minutes until the butter looks whipped.
Add discard, pumpkin, egg, and vanilla to your butter and sugar mixture and mix until all ingredients are incorporated.
In a separate bowl, whisk together your dry ingredients: baking soda, salt, flour, cinnamon, and nutmeg.
While mixer is on low, slowly add your dry ingredients to the wet ingredients until dough is formed.
Mix in 1/2 cup (or more) of your favorite chocolate chips.
Roll the dough into 2 inch balls or use my favorite Cookie Scoop, two inches apart.
For an extra bonus, sprinkle coarse sea salt on top of your cookies.
Bake on 350 for 12-15 minutes and let cool.
