Allow me to set the Thanksgiving stage for you. It's 9am and the Macy's Thanksgiving Day Parade is on. I'm looking forward to the Rockettes and the cheerleaders...of course. Even though it's bright and early, the cooking has begun. At this point we're prepping pies, sides, and all of the casseroles.
When it comes to Thanksgiving, the sides have always been the star in my book. In fact, it wasn't until recently that I even enjoyed turkey. There are a few sides, however, that if you don't get them right, they can be so bad. One of those is homemade mac and cheese. If the mac and cheese is dry, I'm out.
I'm going to show you how to make homemade mac and cheese that isn't dry and everyone will love it! It starts with a roux, and once you have it homemade, you can't go back to a box.

How to make Homemade Mac and Cheese:

Ingredients:
2 Tablespoons of butter
2 Tablespoons of flour
2 cups of milk
3 cups of shredded cheese (2 cups for sauce and 1 cup for top)
16 ounces of pasta
1 teaspoon of garlic powder
1 teaspoon of onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
Instructions:
Melt 2 T butter in stainless steel pan. Once melted, add 2 T of flour and combine to form your roux.
Slowly add your milk to your roux and stir constantly.
Once milk is combined and begins to thicken, add two cups of cheese and stir.
Add garlic powder, onion powder, salt, and pepper. Feel free to altar according to taste--it's my favorite way to cook!
After cheese has melted, set aside and let sauce thicken.
Bring water to boil and cook your pasta of choice.
After pasta is finished cooking, strain your noodles. add to cheese sauce, and stir.
Pour pasta and sauce into a casserole dish and top with cheese.
Put in the oven on 450 for 10 minutes or until cheese on top has melted.
