Growing up, especially in my teenage years, I remember my breakfast of choice, if I ate at all, was a granola bar. In my adult years, I love a good, protein packed, hearty breakfast. I never enjoyed sweet breakfasts like pancakes or waffles until I was an adult as well. I'm really thankful my taste buds changed in this area because I love breakfast.
The recipe I'm going to share with you today is a solid foundational breakfast casserole recipe where the ingredients can be altered or added. In this dish I used leftover roasted potatoes, kale and turkey bacon, sharp cheddar cheese, onion, eggs, milk, salt and pepper. There's no doubt in my mind that this dish would be delicious with mushrooms and feta cheese added as well.
If you'd like to make these potatoes, I use the small Little Potato Co, potatoes from Costco, but any baby red or fingerling potato would work great! I air roast them in my Ninja Air Fryer with some olive oil, salt & pepper, and garlic and onion powder for 25 minutes and they're delicious! We made them for dinner the night before then added the leftovers to the casserole for breakfast. You can also use regular hashbrowns, just make sure you let them thaw pat them dry.
How to make an Easy Breakfast Casserole:
Ingredients:
Potatoes or hashbrowns
Kale or greens of choice
one onion
turkey bacon or protein of choice
8 large eggs
1/4 milk
1/2 cup sharp cheddar cheese + more for topping
additional ingredients of choice (ex: mushrooms, feta cheese, spinach, etc.)
1 T butter
Tools you may need:
9x9 Casserole Dish (This is the exact dish that I have + it comes with a large dish as well!)

Instructions:
Preheat oven to 350 and grease your casserole dish with butter.
In a large pan, cook your turkey bacon until crispy and remove. While turkey bacon is cooking, chop your onion and set aside.
After turkey bacon has been removed from pan, sauté your onion for 3-4 minutes, or until it starts to turn clear. Then add your kale, salt, and pepper, and cook until wilted.
Add your chopped turkey bacon into the kale mixture and set aside.
In a large bowl, mix your eggs, milk, and 1/2 cup of cheese then add your turkey bacon and kale mixture.
Layer your potatoes on the bottom of your greased casserole dish and pour egg mixture on top.
Top with as much cheese as you'd like and bake for 45 minutes or until egg is firm.
