I've said it before, but I'll say it again: I love Valentine's Day. Every year we look for unique and fun ways to show others around us how much we love them.
Every Valentine's Day, we head to my husband's office and pass out valentines to all of his co-workers. It has become one of my favorite traditions, and my kids love it too!

When you think of Valentine's Day treats, what typically comes to mind? I can't help but think of conversation hearts, boxes of chocolates, and especially chocolate covered strawberries. Is there even a better way to say, "I love you?" I don't think so.

With Valentine's Day in mind, I wanted to take my favorite chocolate chip cookie recipe and combine it with freeze dried strawberries. With this combination, I think we made the perfect Valentine's Day treat: chocolate covered strawberry cookies. Spoiler alert: if you work with my husband, you can look forward to these treats on Valentine's Day ♥
My daughter tasted them and said, "these are the best cookies you've ever made in the whole world!" I'll take it!
How to make Chocolate Covered Strawberry Cookies:
Tools you may need:
Mortar and Pestle Set (or something to crush strawberries with)
Ingredients:
1 stick of butter (room temperature or slightly melted)
1/2 cup of brown sugar
1/4 cup of raw sugar
1 teaspoon of vanilla
1 large egg
1 1/2 cups of flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup freeze dried strawberries (If you use the small bags from Aldi like I did, it took about 1 1/2 bags)
1/2 cup semi-sweet chocolate chips
If you'd like your cookies to be strawberries and cream, substitute the semi-sweet chips for white chocolate chips

Instructions:
Preheat oven to 350.
In your stand mixer, combine your butter and sugar and mix together for 2-3 minutes or until completely mixed together.
Add your egg and teaspoon of vanilla and mix until combined.
Slowly add your flour, then sprinkle in your salt and baking soda. Mix on low-medium speed until dough forms.
Add your freeze dried strawberries until mixed, then add your chocolate chips until combined.
Using a cookie scoop, scoop out cookies onto cookie sheet about 2 inches apart.
Bake on 350 for 9-11 minutes.
